A Cambodian morning is worth getting out of the hotel for. Three familiar bowls give you very different starts: fresh and herbal, warm and gentle, or savoury and brothy. The photos above come from The Map's breakfast carousel; recipes and toppings change from cook to cook.

Choose your bowl by appetite

These are descriptions, not fixed recipes. Ask what the stall is serving that morning, especially if you have allergies or avoid fish, meat or peanuts.

Num banh chok: herbs first

Num banh chok brings cool rice noodles together with a fragrant sauce and a generous pile of greens. Mix the herbs, vegetables and noodles yourself. It is a useful choice before a hot day of walking around Siem Reap or Phnom Penh. The fish-based sauce is easy to miss if you only look at the vegetables, so ask before ordering if that matters to you.

Bobor: the comforting one

Bobor is rice cooked into a soft porridge. A bowl can carry fish, chicken, egg, fried aromatics or herbs, depending on the kitchen. It suits an early start and a slower morning. Look at the pot and ask what is in today's version; a name on a menu will not tell you every topping.

Kuy teav: a broth to build yourself

Kuy teav is a rice-noodle soup in a savoury broth. Lime, sprouts, herbs, chilli and fried garlic may arrive beside the bowl so you can adjust it. It is a good stop when you want a full breakfast without choosing a heavy plate. Broth and toppings vary, including meat and seafood, so check the version in front of you.

Make it a real morning

Walk through a neighbourhood market, look for a stall preparing bowls in front of you, and point to the dish you want if pronunciation is difficult. Go while the morning service is active rather than assuming a stall serves breakfast all day. Confirm the price before ordering and carry small cash. If you have only one morning, choose the bowl that fits your appetite and leave time to sit down.
